Help with Trimming

An account of mine asked me to trim some hedges for them the pictures attached is what they look like. I’m not entirely sure how to go about trimming the big puffy looking ones that are out of control and the really long ones with the flat top. The smaller ones I can do but I just don’t want to mess anything up.
